I’m starting a 1.5 gallon batch of hard cider later tonight. I should be tipping one back in about two weeks.

Hmm, I haven’t thought about adding flavors to my brews. On a prior batch I added a little honey into the sugar I used to bottle condition. What are some good flavors? I generally like UK/EU version of Strongbow which is almost dry but still a little sweet and apple-y, but over the years they stopped selling it, or made it hard to come by in the US. The US versions Strongbow sells (Crisp Apple, Honey something) a re horribly sweet.
I now condition with a couple of ounces of frozen concentrate that I bring to about 180f (82c) and let cool. I let condition for 4-5 days testing at day 4 and 5 for a good level of carbonation. I then pop them in the dishwasher on the sanitation setting (top shelf only, I lost some in the past on the bottom because it was too close to the heating element) . It raises the water temp to 165f (74c) during the cycles which last for an hour or two so it kills all the yeast and I don’t have to worry about the glass exploding.
I use bottled New York state apple juice which makes me feel good. It’s hard to find US frozen concentrate as they make more money growing eating apples vs juicing apples so the concentrate I get is from M acedonia/China.

I’ve traditionally gravitated towards Pear/Apple flavoured ciders. Somerby does a couple that I really like, but they are properly sweeter than the US Strongbows you mentioned. I do like sweet drinks, as evidenced above ;)
